These almond meal muesli bars are packed full of goodness. They make a great after school treat for the kids because they also taste great.
Almond Meal Muesli Bars Ingredients
2 cups of eithir of these almond meal products – almond meal blanched or almond meal natural.
½ cup of pepitas – or pumpkin seeds
½ cup of sunflower seeds
½ cup of goji berries
¾ cup of coconut flakes
½ cup of pitted dates (soak in hot water for about a minute, then drain)
1 tbsp organic black chia seeds
1 tbsp flax seeds
½ cup of coconut oil (heat slightly to turn to liquid if solid)
¼ cup of maple syrup or organic honey
1 tsp of pea protein powder (optional)
1 tsp of maca powder (optional)
Put nuts, seeds, goji berries, coconut flakes, dates, and powders (if using) in the blender. Blend to a rough consistency (approx 30 seconds) then add the maple syrup and the coconut oil.
Turn out mixture into a tray and bake for 10 minutes at 180c. Or if you want to keep as much nutritional benefits as possible why not simply put the tray into the fridge or freezer for a hour then cut to size.
Store in the fridge for up to a week. This is a fantastic snack or break up over some yogurt for a fantastic breakfast muesli.
Play around with the mixture and try new combinations such as use cashews and macadamia for your nut choice and instead of pitted dates use cranberries – the taste is delicious! Or add 2 tsp of cinnamon or cacao to the above recipe to add a kick of flavour.
