Ingredients – Almond Meal Carrot Cake Cup Cakes
These almond meal carrot cakes cup cakes are really easy to make, highly nutritious and taste delicious! There is a lot of sweetness without refined sugar. They are gluten and dairy free and Paleo friendly. Almond meal works really well in this dish as it provides a natural moisture via it oils without the need to use butter. It has great amounts of fat and protein and lower carbohydrates. We rated these cakes an eight our of ten, just because they were moist and tasty, but not too moist.
3 Medium-Large Carrots grated
4 Eggs 2 cups of either of these Almond Meal Products – blanched almond meal or natural almond meal.
2 teaspoons cinnamon
1 teaspoon mixed spice
2 teaspoons gluten free baking powder
¼ cup coconut oil
¼ cup maple syrup, honey or coconut sugar
1 cup organic sultanas
½ cup chopped organic walnuts or other nuts of your choice (optional)

Method
Combine eggs, maple syrup and coconut oil in a large bowl and mix well.
Next add in the almond meal, grated carrot, cinnamon, mixed spice and baking powder until well
combined. Lastly add the sultanas and walnuts if using.

Using a cupcake or muffin tray spoon mixture into approx 10-12 cupcakes
(the mixture is supposed to be quite gooey and wet) bake at 180c for approx 12-15 mins
